French Cuisine – A culinary lover’s delight! For all you culinary lovers who travel to all corners of the world for unusual delicacies, you have to try French cuisine. French food is famous for its delicious flavor and beautiful presentation. France also has a culinary tour that presents some extreme foods, such as the following:
- Ortolan is a delicacy in France. It is also illegal to sell, although not illegal to make and eat. The Ortolan Bunting is a small bird. It is about six inches long and weighs about two ounces. One ortolan costs around $200. It is quite expensive, but the cost is comparable to its delicious taste. But behind its delicious taste, the method to make this dish is extreme and sadistic. The first step is to put ortolans in a completely dark cage. A person then feeds them until they are two-three times their normal size. Then the ortolan is drowned in brandy and immediately cooked. - Cuisses de Grenouille, or frog’s legs, is a favorite food of the French. Cuisses de Grenouille is served with a sauce and a sprinkling of herbs.
- Canard a la Rouennaise is duck with a blood sauce. The duck is partially roasted. Its liver is ground and seasoned, and the legs and breast are removed. The remaining parts of the duck are put into a press and squeezed until the blood and juices run out. Then the blood and juices are made into a thick sauce. The sauce is then combined with the breast, and the chef finishes cooking everything. In France, this cuisine is considered elegant and is usually served at fancy restaurants.
- Foie Gras is a duck or goose liver that has been prepared in a specific way. Before the liver is cooked, the bird is force-fed to fatten it. Force-feeding is done with a metal pipe inserted into the goose’s throat so that the food goes directly to the stomach. The bird is fed this way several times a day. This makes the liver swell. Then it is made into Foie Gras, which many people say is very soft and smooth, like butter. But because of the way this dish is made, some countries, including Turkey, Denmark, and Israel have bans against Foie Gras.
- Boudin Noir is a dark, blood sausage. This sausage is made of minced pork and pig’s blood cooked together until the color becomes dark. Boudin noir is usually served with chunks of potatoes, onions, and apple slices.
